Country style pork ribs
The family is getting tired of spareribs and wants to try something different, we settled on "country style" ribs.[p]This will be a first for me. [p]Should I do them long and slow at low temp or would I do better with a shorter cook at a medium temp?[p]They look good, nice and meaty with a small bone. I plan to rub them with maple sugar and ground pecans and smoke 'em over maple chips.[p]Thanks for the advice.

Do they have a lot of fat and connective tissue??? if so cook low like spare ribs until fork tender. If not, cook direct at maybe 300 direct until 145-150 internal...flipping and moving around every 10 or so.[p]Country ribs can be a lot of different things.[p]Beers!
