Got Stogie's brisket goin on tthe Egg!

Just got through putting a 9 lb Select (.87 a lb.) on the grill about 2 hours ago. It's at a steady 223 grate temp. I got the same indirect setup of a drip pan inside a plate setter, except this time there is no water in it, and I'm noticing it takes a lower dome temp to get the correct temp at the meat level. [p]Tonight, after I pull this one off, I'm putting on a Choice (1.99 a lb.) that's prepared exactly the same way, and I'm cooking it exactly the same way. The curiousity is killing me as to whether it's worth the extra change to cook a higher grade brisket on the Egg. [p]Maybe I'll finally get it out my system and go try a beef tenderloin or something.
