    Fab products are injectable marinades that have seasonings, proteins, phosphates and MSG. They come in formulas for pork, chicken and beef, including a lite beef one. Fab-B definitely gives a beefy flavor and is remarkable for retaining moisture. A lot of comp guys use it. I don't compete, so that is not a factor.

    The price has increased in the last couple of years and although the ingredients work very well, I just wanted to back off the MSG when serving barbecue to others, which I do often. Some folks are so sensitive toward it. Wooster (and other fish sauces) is a good sources for natural glutamate's, so that is why I add it to all my injections and why it is so popular as a condiment. I still list MSG as optional in the second recipe. The au jus in the first one has some MSG.

    The other product, the name escapes me is similar to Fab-B, and costs less. Not sure about the amounts of MSG but it has phosphates (which restore meats to the pre-rigor conditions) that help in moisture retention. Two of my buddies tried it.

    I would like to find something that contains the phosphates and not the MSG, and who knows maybe there is something out there.....

    I haven't even thought about the nutrients/additives etc. As in most things there are a lot of tricks to competing.

    Man there is a lot to learn with all this. I am only at the point of begging to learn how much I don't know.

    The one comment about judges that sticks in my head is that they only give you one or maybe two bites, so they have to count.

    Thanks to all, my first brisket was a hit--tender and all. It did dry out very fast once sliced but got the smoke ring & the flavor & the texture I was after--not bad for 7 hours work!
