got some pre stuffed pork at a good local fine food store (Wild Oats)
made dinner tonight and it was so good I thought I might share...[p]Stuffed Pork Chop - Portion for about 3 people 1.5 (?) Lb
apple rasin cinnamin mix[p] Smoked - Seared for 3 minutes
Indirect heat (NO WATER) wood Chips in Pan with little beer
Seasoned with sesameseed-seasalt mix, chipotle mix, cracked pepper, drizzled a slight bit of lime juice
close to an hour at 325*
Internal temp was around 155- 160[p] Added the sliced portions (3) to a bed of Rotini premixed veggi type pasta salad that is to die for (Dont have the brand name handy)
Layed a slice of lime on plate and garnished with some
Emeril spicy Southwestern Spice around the plate
