Crab Stuffed Flounder

Went fishing on Thurs and caught several nice flounder. Ms Egg Pirate ask to have one stuffed. I took a 5 pounder and cut some pockets and stuffed with backfin crab meat, sautéed onions, celery, peppers and lots of butter. Cooked indirect at 400 for 45 min. It turned out awesome! Also made a white wine cream sauce with shrimp. Incredible. The egg held a perfect temp and gave the fish a unique flavor. Not so much a smoky flavor but maybe the brick oven feel. Anyway, it was great. A definite do again. Enjoy the Pix!
