Brisket help please

Okay so here is question for you all. I put my 8 pound brisket on about 1.5 hours ago. It is already up to 125 degress. I am cooking at 240-250 dome. Does this sound right? It seems to be cooking too fast to me. I have only tried brisket twice before and has never really turned out right. Any input would be appreciated. Thanks. :huh:

it would appear that you are on target for a good brisket. i think the rule of thumb is about 1.5 to 2 hours cooking time per pound at that dome temp. although i just did a 7. 5 pound brisket that was well trimmed and no point that finished (195 internal) in eight hours.

Brisket typically jumps very quickly to 150, then takes a long long time to get from there to 170.
I think my last one was 10 pounds trimmed and it got to 150 in under 2.5 hours.
No sweat...you'll be fine.
