Tonights chicken-n-veggies

Tonight I did a different variation of chicken over veggies. I put kickin chickin on the thighs and wrapped them in bacon, another dash on the outside for good measure.

In the veggie pan I cut up celery, onion, squash, red bell pepper, potatoes, and fresh garlic. I also added 3 additional whole garlic cloves, we love them and its like a extra prize to try and find them after everything is mixed up and cooked. I drizzled EVOO over all, kosher salt, fresh cracked pepper, and a little chunk of butter.

One fine dinner. Quick and easy.

    Wrapping chicken in bacon with a dusting of rub is rapidly becoming my favorite way of making yardbird, though I've yet to spatchcock one. Those look delicious, Firetruck.

    Nice cook, Jojo! Fidel inspired me to do some chicken breasts like that last year when he posted his. I did a stuffed breast with some sliced jalapenos and some pepper jack, bacon wrap on the outside, and seasoned with some Benoit's cajun seasoning.

    Those things are really nice! I'll be trying your garlic suggestion when I finally do "The Chicken" recipe.

    Seems this is the way to do chicken hear of late. bill did one simular yesterday. Looks good. Did you put the vegs on at the same time as bird and if so were they all done at same time?

    i want to try the chicken and veg. could you please tell how you set it up. temp. plate setter in or out. did you cook veg. and chicken same time? thanks for any reply

    Setup was plate setter then a pan on top of that with the veggie pan inside of the first pan. The reason for that was to make a water bath for the veggie pan, I was concerned that the plate setter would get too hot and burn the bottom of the veggies. The grate sat on top of the veggie pan. All went on at the same time. The veggies turned out soft which is fine with me and mine. If you like your veggies more al dente you may need to put them under later. Dome temp 350-375 for about 1 hour.

    I think the veggies would have been fine without the water bath because I put the food on a cold plate setter, and the veggies along with all the wonderful drippings produced a lot of liquid.
