Ok JL..this is my best pass so far...did a pot of 08 Florida Eggfest Cowboy beans, CWs Cornbread, and my best Wings yet..a modified DP recipe...all was absolutely the best...





Sorry bout the focus on plated..was getting pretty hungry by now...

Worked on this most of the afternoon....unknown number of adult beverages in the process! :woohoo: :woohoo:
Best of all..plenty of leftovers and buncha cornbread to have in a glass of milk later! :side:

be glad to doug.they came out great..this was my 2nd attempt with the modified DP recipe.. I gotta run right now and go to a retirement party of all things...doh!..but email me or remind me and I'll be glad to share it...they came out great if you like tender moist wings with a crunchy sticky skin and a good after kick

Them beans and beverages is what got the pic out of focus (heavy on the bevs!! :P ) You were doing so good and then droped the ball in the last pic!! :laugh: Very nice in all seriousnes. Cornbread seem to be the "noknead" of the moment and I must try it. The problem I have with breads on the Egg often is only having a med. Egg it tyes it up so the main course has to be quick. Got to get me one of those racks. Supposed to be cool around hear next few days and I work off tomorrow afternoon so will be doing me some cooking for sure. Just not certain yet except flat iron tomorrow. What is that white forground left on the plate?

Nice looking wings. I just got a dutch oven today and am going to try those beans real soon. Hopefully they come out just as nice as yours

Those are some fine-looking eats you did! I've got to break out my wing rack like that...I haven't used it in a while, but now I'm inspired to go look for it. I think my wife put it away with the pots and pans last time I saw it.

oh..the white foreground is jus some ranch dressing I poured to dip the wings in..well actually some celery, but the wife told me after I poured it that she had forgot the celery!!..grrr...

nah..it was a long time friends retirement..i'll be a few years b4 I can even consider it..

doug...this is what I did on the wings...pretty much follows the DP recipe..but I added a lil more heat w/the JH Jalapeno rub....I also did the first hour to 1 1/2 indirect at around 270 to let the breading get good and crispy..then I went direct at the end of the cook while mopping the wings once each side with a honey hobanero bbq sauce so that it would carmelize real good on the wings..did this for the last 10-15mins...
This was my 'modified' breading..
Breading:
1/2 cup flour
1/2 cup corn meal
3 tbsp John Henry Jalapeno rub (add more to taste)
1 tbsp DP Swamp Venom (add more to taste
1 tsp cayenne pepper
2 tsp salt
The finish I used was a local honey habanero bbq with the following adds..
Finishing Mop
1/2 cup favorite BBQ sauce (spicey is best)
1/4 cup cheap bourbon (just for you Tom! :woohoo: )
15-20 good shakes Louisiana Hot Sauce
2 tbsp brown or turbinado sugar
other than the above notes, I used the temps and egg wash from the DP recipe... -

No problem Doug..these were as sweet, moist, and crunchy as any wings I have had out in public..not to mention hot
..after dinner I went to a friend's retirement party and they were ordering up wings..I couldn even look at 'em after having these 'egged' wings earlier..no comparison!
