Smoked Salmon
MAC
Posts: 442
I would like to cook some smoked salmon on Friday. If I make a hard brine(Float an egg), how long should I brine it? I want to serve the salmon as a meal and not as a cold smoked side dish with cheese and crackers. so it doesn't need to be too salty or dried. Thanks in advance.

BTW, if you have leftovers, check out the recipe on the 3-Men site for smoked fish dip. It is killer.

Mr Beer,
That I'll do. And good to hear from you. Might share a piece or two over a home brew or two.
