I used Minwax Helmsman Spar Urethane. Three coats with sanding between each coat.
Still looks new and clean up easily.
I made mine with pressure treated 5/4 decking. Pic is in the profile.

I grew up in that climate. My dad was carpenter and if I remember correctly he used linseed oil to protect the wood he used outdoors. Here in GA I used Minwax Spar Urethane ala Fidel.
