Burning a few Rib-eyes tomorrow, and wasn't sure if these babies were going to swim overnight in my olive oil, vinegar, lemon pepper, garlic and hickory smoked salt w/thyme mixture, or if I was just going to dust them with some Charcrust a few hours before the hellfire of the Egg gets under way. Anyway, don't know why I even picked it up out of the side door of the frig, but the steaks are now immersed in a marinade that was on the side label of a bottle of A-1 sauce...called "Romanian Steak" (1/2 cup of A-1, plus 2 tblspns. of these next 3 ingredients, mixed all together: Dijon mustard, honey, soy sauce). Finger test says this will be good. A report back to you after the last burp. Will be tempted to lay a few nice strips of green chile on top after the last turn before the dwell-down. Adios amigos,
