anyone have a recipe for beef stroganoff?
I have not had this dish in a long time and wanted to make it with this sirloin I have. Thanks for a replies. Bush Gator

I do a version of this that the family really likes. Cut the sirloin into chunks and brown in a stainless or cast iron pan (not non-stick). Brown the meat hot. Don't just "gray" the meat as I call it. Brown it fast so it is brown, but not totally cooked. Remove from pan, and deglaze the pan with a diced onion or two, and a few cloves of garlic until soft. Throw in a bunch of mushrooms and cook those. Remove all this from pan. Then throw in 1/4 cup of butter until melted. Whisk in 1/4 cup AP flour until it's all combined and bubbling. Then whisk in 2 cups of warm milk and a cup of beef broth. Cook down until thickened, then add back mushroom/onion/garlic mixture and the beef. Cook until beef is done, then add a cup of sour cream. Stir in and then salt/pepper to taste.
I think that's what I do anyways! Enjoy.

Seriously, Mom always made "hamburger stroganof" which was basically grayed hamburger with cream of mushroom soup and sour cream added (not that she was a bad cook...and I actually grew up loving the stuff.) But later in life I wanted to cook it with fresh mushrooms, my own sauce, and with some browning flavors, and I came up with this method. Works for us.
Don't forget the wide egg noodles!
