When I cook pies at 550, they are usually done in about 7 minutes.
As for cheese I like to use goat cheese, a very chunky tomato sauce and fresh basil for one pie, and carmelized onion, chicken and fontina for a different pizza. I'm thinkin' that if the za is in for 15mins, you will have something that resembles a wall hanging rather than a za. :silly: Seriously, I'd start checking after about 5mins, you can always add more time to the cook easier than cooking it less. You'll find what works for you after a few za's.
As far as sauce goes, I've made my own, and I've dressed up the jarred sauce w/ garlic and seasonings. I would suggest that if you use jarred sauce, to cook it down a bit so that it's a bit thicker. Also, don't limit yourself to only red sauces. German pizza is one my favorites!
Any cheese that melts will be good. The thing is, if you add ingredients that you like, you love it! I know you'll do great! -

I make mine at 500, takes about 8-9 min., give or take . I use DiFratelli Pizza sauce from a can, but add fire roasted diced tomatoes to cut the sweetness. Just mozzarella cheese so far. This one has sausage and onions. Only about one out of 5 turns out round. Still workin on that. Good luck
