Ideas for turkey breast?

Does anyone have any ideas for cooking a whole turkey breast. I did this a long time ago, but forgot how. The skin was very crispy, and the breast was very moist.

    I just put some montreal steak seasoning on them and roast them at 325 degrees until the thermometer says 170. I use pecan chunks for smoke. Yummmmm.[p]TNW

    I usually rub a little oil on the skin; season the outside then inject a marinade in the breast. I tend to use cherry wood on poultry.

    Just cooked two turkey breasts yesterday. Used a rub that I had made myself and then rubbed olive oil on. Cooked them on a rack over a drip pan for about 2 1/2 hours at 325. They were scrumptious. The skin was crisp and the inside was moist but not wet. Kroger has Honeysuckle fresh breasts on sale this week in the Atlanta area for 99 cents/lb and since those were so good yesterday, have gone back and put 4 more in the freezer.

    How big is your freezer? Between that, the Boston Butt and everything else you've been cooking the last week, you must have a monster freezer!

    Hi You're a Man Shelby! I have two refrigerator freezers, one a side by side and then an upright freezer. You would think that we were feeding 12 people everynight, wouldn't you? I grew up with not much good food and I think that it is a psychological thing!

    I grew up in a family of 14. We didn't have a lot of extra food either. I am the same way!! I have a huge freezer that is always full and a huge pantry. I have always thought it was a pschological thing too!! It's funny that you mentioned that. :)
