I have a Silver Salmon fillet that my neighbor brought back from Alaska It is about 16 inches long and about 2 inches in the thickest part. I have it in brine overnight, and was looking for an idea of how long it will take to smoke, and at what temp? Thanks!

    Buck,
I used this version for salmon this last friday and was very pleased. I will always use it. Maintaining the low temps aren't that hard if you use a lesser amount of lump in your firebox. (It was 50° outside)I try and keep the temps around 90° for the first couple of hrs. before letting temp rise to 200° for a couple more.. Just my way
