I have a six pound brisket and was wondering if I should plan on about nine hours cooking time?
Thanks
Thanks

Plan on 12. It will come off in 9 and every one will be happy.

12 hours is good, 235ish grid temp and it will hit 195-200 internal in about 10 hours with balance of time spent in the color. If it gets done earlier, just keep it in the cooler longer. If you get past 10 hours and not close to 195-200, then foil to speed things up as the it needs at least one hour to mellow in the cooler.

Thanks I will plan on 12.

Yep, that thing will hang up around 165-175 and will think your thermometer is busted!

Something I have been seeing recently begs the question:
Point, or flat?
A point will take longer.
A flat will come out better.
