Butter knife for rib membranes -- best tool yet

Someone recently mentioned using a butter knife to loosen the membrane on baby back ribs. (I wish I could remember who it was, but whoever it was, thanks!) It works much better than a sharp knife because it doesn't shred the membrane.[p]I found that if you work the butter knife under the membrane on the back side of the rack of ribs, along the center of the bone in the center of the rack, the membrane lifts right up and you can peel it off toward both sides with your fingers.[p]As I recall, somebody is working on a new Egg cookbook. Will there be a "rib tips and tricks" section? If so, this butter knife trick might be worth including.

Prof Dan,[p]I completely agree. Though I didn't suggest this, it is the way I do it, and coupled with a paper towel, is the best way I've found.[p]Enjoy![p]--sdb
