Tri Tip Chimi Churri

Made a really good tri tip tonight.

I marinated it for 3 days in some chimi churri marinade. The brand is Tulocay's. Their website is http://www.madeinnapavalley.com they have lots of sauces and this is the link to the marinade I used. I don't work for them, it is just good stuff! I found it at Nob Hill Grocery in Alameda CA if you are close and want to pick some up. If not they mail order.

Anyway I cooked it on the Egg using temps just like this recipe at the Eggs By The Bay website but I used just olive oil (without garlic) and red wine vinegar for the baste (in a spray bottle.)

I threw on some Jack Daniels chips for the second part of the cook after the hot searing and cooked it to an internal 140 or so.

The result was an interesting mix of flavor. The Jack Daniels chips made the outside smoky, and the inside had a strong flavor from the chimi churri 3 day soak. When you chewed it up the flavors all mixed and changed around. Everybody liked it. No sauce needed!
