Grillapalooza

Just a reminder:
The 4th Annual Grillapalooza will be taking place at The Outdoor Cook in Rockford, MI tomorrow. Yesterday I smoked some Chex Mix over pecan that I will be taking. My husband will be serving pulled pork that he is smoking in his Cookshack, and I will be preparing Island Pork on a BGE. There will be cooking demos as well as lots of grills to cook on. · 2 lbs. boneless pork
· 1 cup lime juice
· 1/4 cup Mrs. Dog’s Jamaican Jerk Marinade
· 2 oz. dark rum
· Skewers, soaked in water if wooden[p]• Trim & cube meat. Combine with above ingredients in ZipLoc type bag and mix well.
• Refrigerate 3-24 hours; remember, the longer you marinate it the hotter it gets....
• Thread meat on skewers and grill over hot coals until
done.[p]We always fix this when we’re on vacation on the island of Vieques. It is also a great way to prepare fish, but reduce your marinating time to 1/2 to 2 hours max.[p]Bone appétit!
