Pig Candy and Steaks

Holy cow, you guys didn't tell me how good pig candy was. We wolfed down two pounds of it before dinner.

Then we had the steaks and grilled veggies, but no one was too terribly hungry:

Oh yeah, porky, sweet and then the heat. We could have kept the steaks in the fridge and just eaten that.

..did a couple of Trex strips tonight myself..but dang things came out tough for some reason..was prime cut meat fresh from the butcher...dunno if I cooked em too hot after the rest or what..but they were much too chewy..any idea?? -
Nice cook, man. Those are some big ol' steaks you did. Everything looks yummy! I'm thinking about doing some pig candy--got some thick sliced bacon on sale today at the grocery, so I bought two packs.

Ouch, prime steaks coming out tough? If they weren't medium well or well when you cut into them, I'd have a chat with the butcher. Did you let them come to room temperature before searing?

It was my first run at pig candy and I was thrilled with the result. I couldn't fine a grid at Walmart, so I just used the Egg grate and it worked fine. I did burn a couple of pieces of the first batch, but got the hang of keeping everything within the footprint of the drip pan on the second and the results were far better.
