Roast Pork again -- This time...

No roulade...

Removed the silver skin --
Damped it dry --
Rubbed it with EVOO
Seasoned with S&P, and my own blend of Italian Seasoning --
Added a little extra Rosemary -- and a smidge more Sage
Covered it with bacon a-la-Toad-style

Vacu-wrapped it, and it's in the fridge overnight...

Will pull at 135F precidely, then double wrap it with HDFoil, towels...
Stash it in the "cooler"

... and serve at 6:30 PM

Someone else is doing sides... desserts...

Preparing gravy separately...
