Lamb Ribs

A local market (Cub Foods, here in Denver) gets its lamb "case-ready", and they always get a couple of packages of lamb ribs. When I've bought lamb breast (the origin of the ribs) there has always been an ungodly amount of fat that just turns into waste. These case-ready guys are superbly trimmed, and the cost is acceptable. Yesterday I did a package (they are also cut into individual ribs) with a rub of black pepper, salt, turbinado sugar and dried mint. Basted with Big Chief sauce during the last half-hour, they were delicious.
