Jerk Chicken & Caribbean Rice

I made jerk chicken for the first time on my large BGE, using a recipe that worked great on my old grill before I got my egg. Richard FL posted the same recipe the other day here:

I used boneless thighs instead and oh WOW were they great! I did them about 5 minutes per side, then removed and foiled them. Then I put the rice on the Egg and shut it down, letting it bring the rice to temp.

The chicken was kickin' !
The only downside was that I was out of tabasco sauce for the rice(I know....who EVER runs out of tabasco sauce?) so we substituted some Dave's Insanity Sauce. By 'some' I mean way too much :blink: :pinch: :blink: On the bright side....my sinuses are cleared up :silly:Knoxville, TN
