Rib membrane removal

Looking for a good (easy) way to remove the membrane on baby backs without it always breaking up. Any ideas.[p]TX

    RHO,[p]I use a knife or fork to raise the membrane off the bone. Grasp with a paper towel to gently pull it cleanly from the rack. Some have reported great results using catfish skinners.[p]Spin
  • RHO,[p]I do exactly like spin suggested.. but you know what.... last time I did baby back ribs I forgot to remove the membrane... slathered them up in so much buttermilk/mustard goop for an overnight rest and never even noticed the difference with the membrane still on the meat. [p]It was a couple days later ... reading something here on the site... and I thought... Man... I forgot to remove the membrane and they were "awsome"... so next time at least on the delicate little baby backs I am just going to leave them alone. Now... spare ribs may be a different story.[p]Anyway... try leaving it on sometime and see what you think.
    May save you some time... it's not hard...but its not fun either :) [p]Happy BBQ'ing... BB [p]

    I'm in the "catfish skinner" group. I get a nice clean pull 10 times out of 10, no matter how tough or how fragile the membrane is.

  • RHO,[p]I find baby backs to be quite easy to de-membrane (how's that for a word?). I use a butter knife which I slide along a bone in the center of the slab. Once the membrane is separated from that rib, I slide my finger in and move it back and forth. Then I lift and slide out to the ends. [p]Bill

    Bill is using the best and easiest way. A butter knife in the middle of the rack to loosen the membrane, use your fingers to further loosen the membrane all the way through, work the membrane loose w/fingers to within 1 rib to the right and then the same to the left, then, lift it off. The whole operation should take you no more than a minute.
