I've had one going for about 3 hours and internal is reading 150. Question is, can I take it as is to 200 or does it need to be wrapped in foil at some point? TIA!

I assume you is tryin to make pulled beef outta that thing? I fine that the little boogers dry out two much if'n I don't wrap them towards the end of the cook. I basically let it run enough to get some good smoke flavor and let the rub caramelize a bit, then wrap it in foil. Wrappin it will also hurry it along too, so keep an eye on it.

Thank you! Yes, I do intend to pull it. It's got some beautiful bark and is presently stuck at the plateau (actually went backwards a few degrees) so the timing should be right. I'll post a picture later! 8 - )
