Chicken Cordon Bleu...sort of

Morning All:
EggHatter had gotten 3 boneless/skinless chicken breasts and I didn't feel doing them as we normally do (brine, a rub and then cook), so first I pounded them to about 1/2" thick and added a slice of ham...
next a slice of swiss cheese...
fold it over and secure with toothpicks.
Then on the Egg on the top level of the adjustable rig at about 375 with a chunk of cherry for smoke.
Also split a large sweet potato, spread on some butter and sprinkled some cinnamin.
This was wrapped in foil and put on about 10 minutes before the chicken pieces.
The chicken cooked for about 22 minutes (until hit 160+ with the Thermapen).
The final product plated.
Added a salad and peas for me with broccoli for EggHatter. Very easy and tasty dinner.

DANG That looks good. Have 2 larges cooking now for tomorrow but might have to fire up the 3'rd for some of that. Wife said thanks for the Idea. .
