Another beer butt chick w/Ken Stone's rub this time

Last night I mixed some of BlueSmoke's Glided Splinters rub and olive oil in a glass, brushed a 4 lb. chicken all the over, wrapped in cellophane and back in the refrigerator this just about 30 min. ago. Gave in one more light coating of just olive oil, onto the beer can and in the egg with a handful of cheery chips and a slice of onion in the lump to make the neighbors hungry.[p]This has become my favorite chicken cook, third one in a couple of weeks. Now to find the vggies to go with it.

    I have been thinking about doing that, just checked to see in I had the pinapple slices in the pantry. Still have not made up my mind.

    Tonight I am cooking asparagus,mushrooms,sweet onions,green beans,zucchini and fresh pineapple.My wife loves this.

    That sounds like one hell of a combo! Enjoy it. [p]I been workin on getting the veggie garden ready for planting, and plan on doin' plenty of high temp veggies this summer. Are sweet onions hard to grow?[p]Go terps! Game in minutes.

    Here is a recipe that comes from Flay and McDavid that we have found to very good.[p]Grilled Peppers and Black Olive Relish
    1/4 cup Pitted black olives, chopped
    1/4 cup Grilled red bell peppers, seeded and diced
    1/4 cup Grilled yellow peppers, seeded and diced
    2 tablespoons Crushed red pepper flakes
    1 tablespoon Fresh garlic
    2 tablespoons Fresh thyme
    1/4 cup chopped Fresh parsley
    2 tablespoons Sherry vinegar
    1 tablespoon Honey
    3 tablespoons Olive oil
    Salt, to taste
    Freshly ground black pepper, to taste[p]Grill the Peppers and then mix ingredients serve over smoked or grilled chicken.

    djm5x9,[p]Try using Italian dressing and see what you think. I do that all the time and it is fantastic! Was a beautiful day in metro and I am worn out from yard work but rewarded myself with a great ribeye.[p]

    Bob:[p]I used to use Italian dressing but liked the results of olive oil better. Just a note, you can add crushed garlic, spices, etc to the olive oil and let the vegetables marinate in it for an hour or so to allow for flavor transfer. Remember to periodically spoon the mix over the vegetables.

    Bob:[p]Forgot to add that we had asparagus (from the garden), baked potatoes, and an eight pound rib roast all on the cooker. Some very good eating this evening.
