Babyray, I'd go with an indirect set-up (say in a V-rack over drip pan, liquid or not) with heat at meat level registering about 230-250 for 12-15 hrs total. Use apple/pecan/oak/hickory, whatever turns your crank, for smoke source.
If you are gonna put some liquid in drip pan, I'd recommend Dr Chicken's method of Coke/water, maybe 60/40 blend, replenish as/if required.
