Gyros!!

i am making Alton Brown's Gyros and i have seen others here have done it 9i remember reading it) how did you do it on your egg? [p]i was thinking bout doing it like a fatty. with a little cherry or apple smoke. does that sound about right?[p][p]thanks[p]happy eggin

    Terry, once you have processed the meat into a paste it will be very sticky and difficult to shape. I did it in plastic wrap then let it set in the fridge for at least a couple hours.

    yea i nade it saturday and froze it. yeasteday afternoon i moved it to the frige and that is where it is now i will lite the egg in a couple hours. it looks like you used a indirect, with the extender. i have one should i use it? and do you recomend any smoke?

    I like cooking up high in the dome, seems to cook more evenly without having to turn it. I didn't add any smoke because its not a flavor I associate with gyros. Post some pics. -RP

    I used Alton Browns recipe and cooked it just like a fatty - Took 2-3 hours.

    Turned out great.
