Last week we cooked some very high end beef filets which turned out quite well.
For your Friday viewing pleasure and the stimulation of your appetite another Ravnhaus production comes your way.

    Just helping out. If you are going to give up meat on Friday it should be felt as a true loss.

    That is a nice write up. The meat was so pale that I first thought that it was veal or pork. However, once you showed the cut pieces, there was no doubt.[p]I did notice the new take on the dwell. Instead of closing down the vents completely, just throttling them back. I will have to try this the next time that I cook steaks. [p]I have to ask what makes their filets worthy of twice the going rate?[p]Nice Job,

    ravnhaus,[p]This would have been your best one yet except it didn't have those patented contemplation pictures. In the middle of the show I want something to look at - the sun, the sea, the sky, etc - so I can contemplate whether I ought to do the same cook today or tomorrow - ;-)[p]I'll working on music for your shows.     It's more about presentation and tradition I guess. I don't really eat the bacon (used to) and the Ravness prefers her to be bacon free.
    I think the theory is that as tenderloin is so lean it needs bacon as a flavor additive and it sure looks great.
    Bacon free tenderloin is pretty durn good though.

    Yeah, I know they are pretty pricey. I say the same thing to the Ravness when she brings them home but she says she can tell the difference and as it is one of the few meats she seems to eat and enjoy I just shut my mouth and cook what I am told!
    The end result is always worth it.
