I need help w/ Trout

My brother-in-law gave me a bag of frozen trout that he had recently cought. These are some good looking rainbows (headed and gutted, but not filleted.) I have not cooked these before and need a good recipe so that I don't ruin them. I am thinking a little lemon juice, salt and pepper with a healthy dose of apple or pecan smoke, indirect @ ~300°? Am I in the ballprk?[p]Thanks,

This site is worth a look at. I did a salmon filet last week and it turned out great. Brine and low temp smoke. I put polder through the top of the filet and out the bottom to get temp at the fish level. Use only a couple of handfuls of lump to help keep the temps down. 150 degrees untill fish flakes easily or 150 degree internal. Moist and delicious
