3 Pound Rib Eye Roast

<p />Dinner tonight is a 3 pound rib eye roast. I rubbed it with JJ's Rub last night, and it sat in the refridgerator about 14 hours. Let it warm up to room temperature for two hours. On the BGE as 12:45. Steady temp at 275, polder set for 150, pecan chips for smoke.[p]I'll show the AFTER photo later. Got to work around a timing issue. Better half is dragging me out shopping this afternoon![p]

    <p />Pull off the BGE at 2:15 with an internal temp of 157 (cooked faster than I planned). Immediately wrapped in foil and let set a few minutes. Temp continued to rise to 165. Got potatoes baking on the BGE now. Should cut into a perfect medium & juicy piece of beef for an early dinner! (Convinced the wife to go shopping after dinner. This cook smelled so good, she agreed!

    Now........wy did you have to go and do that!! It's only 4:00 here and I have to wait 2.5 hours until dinner....hope the grumbling stomach goes away!! Seriously.....looks awesome!
