It is from the beef shoulder - also called an upper blade roast I believe.
It is part of the whole chuck. -

you have to skip their ads but there is some useful info in there.

I also found this interesting "factoid" about flat irons in Wikipedia:
"The steak was created by researchers at the University of Florida and University of Nebraska during the course of a study of undervalued cuts of beef. The study also found that this specific cut is the second most tender cut of beef, after the tenderloin." -

One thing I can add is that they freeze very well.
Kroger sells them in a cryovac pack, as do a lot of other grocers. They are on sale pretty frequently for $4.99/lb, sometimes even $3.99. I stock up at those prices and freeze them in the cryo.
They thaw in a couple hours and eat just as good as if they had never seen the deep freeze. -
That's what I need - a deep freeze. Why they don't come standard with apartments is beyond me. :huh:
