<p />I'm a big fan of Chef Laurent Tourondel and I saw him make these on Martha Stewart's show a while back. So I made them today and they were really dramatic and delicious. They stole the show from a great roast. [p]I had to buy the correct pan but after today I expect I'll get plenty of use out of it.

drbbq,[p]I saw a recipe for them not too long ago. The batter seemed easy enough for even a clutz baker like myself. But, the baking pan is the secret? Did you try with just cup cake tins?[p]gdenby

gdenby,[p]I've done these in very greased custard cups and they come out giant and delicious. Won't be quite as many because of the capacity of the cup. Fill about 2/3rds full. Do the big ones when you want to fill them. Leftover chicken/turkey casserole type stuff works great in them. Countless possibilities. And delicious.[p]mShark

gdenby,[p]It's flour, eggs, milk and a little salt. Then a little cheese on top. I'm sure the muffin pans would work, but the popover pan is really the perfect shape, so they may not get quite as tall and cool looking.

muffin pans work fine. the secret is the hot fat in the bottom. We did Yorkshire pudding which is just the same batter (2 eggs, 1 cup milk, 1 cup flour, some salt) at 450 10 min then 350 20 min.
