Cook time on brisket?

Unknown
edited November -1 in EggHead Forum
What the approximate cook time for a 4.5 lb brisket. I was planning to cook in a v-rack above a drip pan indirect on a stone. Also do I need liquid in the drip pan? And if so do you put straight water in the pan or do you add some spices to the water.[p]Thanks for your input.

    Duane in SW MO,
You are probably lookin at about 10 hours at 250 dome (probably 225-240 cooking level)...and no water in the pan.[p]If you use water in the pan, you will probably want to cook higher, or monitor your cooking level. Forget the spices in the drip pan. Any effect from spices or other liquids will be minimal...if any. Water is fine if you use liquid.[p]Could not hurt to allow 12 hours or more. If it is done early, it will enjoy a 30 minute to 3 hour rest wrapped in foil and in a warm cooler.[p]Have fun. It is one of the finest Q meals.

  • Nature Boy,
I agree. A good Egged brisket is one of my absolute favorite meals. We're planning a nice big brisket to be ready by kickoff on Sunday evening. Jo's headed to Costco right now.
