Go to the bbq store on line (link below) and order one. They hold 5 or 6 racks and you can have them over night it to you to be there before you need it Sunday.

JSlot has a method that will do the trick for you. He does 10-12 pounds of ribs at a time.

Good suggestions so far, but you can also roll up each rack with butcher's twine & cook them with the bones placed vertically. JCA

Julie...[p]Funny about that bologna. We do several local BBQ Festivals and this proves to be the hit of the day. People will crowd around our booth to watch...so of course I make a big deal out of it!! Lots of fun![p]Once it is served....gone in minutes![p]

nice illustration. A suggestion on the text. It says trim bones are off to the right....but it looks like the trim bones on the left, and the ribs on the right. Eh?[p]Could just be me!
