Seasoning chicken breast with skin on....

For those of you who want to take the skin off the breasts before eating. Before cooking, just run your finger between the meat and the skin (be careful not to tear the skin) to loosen and then rub your favorite rub/spice between the meat and the skin. Then remove skin before serving.
Nice and easy and you don't have to mess with it while cooking.[p]Marv[p]

    My fingers are big and clumsy, so I do the "under the skin" seasoning with the wrong end of a big plastic or wooden spoon. It doesn't tear the skin, and it spreads the seasonings around pretty well. I also stick in some sliced garlic cloves, and maybe some pieces of onion or green onion.
