first try with my new egg
Took the heat up to 650 as video showed. Did not let charcol get grey before putting the steaks on. Did the 2min,2min, 2min thing as the video shows then tented for about 5 min. Got a burned/charcol taste and the rib eyes were not crispy as I would have liked. Good but not great..... Any help out there? Rusty

Rusty,[p]No need to let the charcoal get grey - you're not using briquettes.[p]Let the fire burn clean until there is no visible smoke. That will get rid of the flavor you experienced.[p]Do a search for the TRex method for a perfect steak.

Rusty,[p]Just adding my $.02, repeating [emphasizing!] what has been said...[p]Got the Egg heated -- and wait... wait... wait... until the smoke is nearly clear... no white in the smoke...[p]Then wait another ten minutes...[p]Now -- bring the temp to 500+, sear 2 mins a side... when you turn the steak, put the meat down on grill which hasn't been used when searing the first side... grill will be much hotter.[p]Then, pull the steaks, and bring the temp of the Egg down to 400-ish [350 is just fine!]. Do this by closing off the drafts... takes about 10+ minutes.[p]Then put the steaks back in and roast them until internal temp is what you're looking for... suggest 125 - 135F[p]A digital thermometer makes this process so simple that even "I" can turn out a great steak.[p]Glory be to TRex instructions![p]~ Broc
