GZMOGATOR, We do them by a tip posted on here, sprinkled with dizzy pig, and on the egg for just a few min. they are thin so they do not need much. soft flour tortillas warmed on the egg then piled with coleslaw and the fish and folded up. YUMMY!

GZMOGATOR, Because the sources and handling of talapia vary greatly around the world (what you get will often be previously frozen), you might do everything exactly right and still wind up with poor results. "Tilapia" encompasses a variety of species and there starts the uncertainty. Your best bet is to befriend a local fish monger and hope that he's selling fish from a good source. And if you're not satisfied, go back and bark! You'll find some interesting reading at the site below.[p]Rascal

Juliem4444,[p]This is exactly what I do. I actually use just shredded red cabbage and a chipotle mayo made with half sour cream, half mayo, chipotles in adobo, salt, pepper and a splash of lime. If in a real hurry just mix Tipatio or some other hot sauce with ranch dressing to drizzle on top. Oh, cilantro to sprinkle on top gives great flavor.

I baked tilapia filets tonight. I began by flouring and egg-washing them, just like I'd do if I were going to fry them. But instead of crumbs, or panko, for the final coat I used crushed french-fried onions. Then I baked them, indirect, at 350 for 25 minutes. Not having a baking sheet for the Egg, I lined a grill topper with parchment paper. The filets were great!

Here's the one we love to eat.[p]STUFFED TILAPIA FROM COSTCO’S[p]Direct setup with extended grid, perforated pan – spray with PAM.
We use guava wood and/or cherry. Stabilize egg at 375º.
Can sprinkle with rub of choice ( Dizzy Dust + Ragin River )
Cook for 35-40 Min, rotate pan if necessary Don’t flip - they will come apart.
Pull when Internal temp @ 140º.
