Shrimp Recipe

OK, it's about time to start figuring out what stuff to cook for the super bowl and I need someone who knows this certain shrimp recipe. I don't even know what it's called so I will describe it:[p]I order it whenver I go to Papasita's in Houston. It's awesome. It is large peeled shrimp with some sort of marinade/spice on it, sliced down the back. Along the slice they insert a small slice of cheese (don't know what kind) and a slice of jalapeno. Then they wrap the shrimp in bacon and grill it. What is the name for this cook?[p]If anyone knows this one, please chime in. Also any help on times and temps for egging the shrimp with bacon would be appreciated.[p]Thanks,[p]Bob[p]

Cook it hot and fast like a steak. As soon as the bacon looks right it is done. I make something similar with oysters instead of shrimp. It is quite good.
