Pecan Butts

As a follow up to yesterday's post at the request of BENTE, here are the pecan-pecan butts. I prepped them by injecting with a 2:1:1 mix of apple juice, apple cider vinegar, honey and a tablespoon of John Henry's Pecan Rub. After and hour rest I gave them a dusting of John Henry's Pecan Rub, a light coat of mustard (sorry RTD) and another coat of the pecan rub. Back in the fridge for a couple hours. Built my fire with Wicked Good WW and several good sized pecan chunks. Let it stabilize at 240 then butts on.[p]

About 22 hours later, the smaller of the two was reading 197 at the lowest point so I pulled it and tossed it in the cooler. The second one is now 194 in the lowest point and about to be reunited with his friend.[p]

Of course, I had to give it a little taste test. Initial impression is that the JH Pecan Rub is quite a bit sweeter than the Dizzy Dust. The bark seems to be a bit tougher. The internal meat is really really good. Tender, juicy, and with a light sweet smoke flavor. I may follow with more photos when I pull them.[p]Next round I may mix the JH with a little Dizzy Dust to see what happens.[p]

well that deffinatly looks great. i have some of that pecan rub but rarely uase it i guess i will have to try it on the next round of butts.[p]
