Prime Rib Roast Questions

I have a 3.5 pound prime rib roast that I want to cook to a temp that will come reasonably close to satisfying the whole family. Here's the deal: My wife will absolutely not eat beef with and red in it. Maybe a hint of pink, and I mean a hint. I prefer med rare to medium on prime rib.[p]I am looking for an internal meat temp that will cook the outside section to my wife's liking but have the middle section as close to medium as possible. What's the magic number?[p]Also, any suggestions on rubs, dome temps, etc. would be appreciated.

    In my catering business I use 140 for rare, 150 med rare and 160 for well.
