Friday's 23.5# Turkey

I did a 23.5 turkey yesterday. Plate setter legs up, a inverted alum pizza pan and the pizza stone on top of that. I put the turkey and pan on top of that, no grates. It went on at 7:15am and was done at 12noon, about 5 hours for a 23+ pound turkey, I thought it was going to be longer, I was wrong, My temp was 325 exact, except when the turkey was put on and I never adjusted the settings, 1 1/2 hours had past at 250, before the temp was back at 325. the thigh reached 178, I removed the turkey and wrapped in foil and placed in a cooler with hot towels till 7PM when we ate dinner!!! The turkey was perfect not dry and was great, no complaints. Yes this was a Madd Max's turkey. Maybe pictures later on setup and final results
