Breakfast sausage anyone?

I've been on a quest for a good breakfast sausage recipe. Anyone have suggestions? Thanks.

    AndyR:[p]Just substitute pork for the specified meats. Ground boneless pork butt will have the proper fat to meat ratio.

    I have an easy one for you....[p]Use ALL ingredients to your own tastes....[p]Frest ground pork (from the store) about one lb.
    poultry seasoning about 1/4 tsp.
    Cajun seasoning about 1/8 tsp. (more would be spicer)
    A sprikle of dry ground garlic
    (the kicker) about 1-1/2 tsp any sauce i.e. steak sauce, bbq sauce, pepper sauce. Try a different one each time.[p]Even my wife likes this and she only eats ceral for breakfast. www.marvsbbq.com

    AndyR,[p]Here is my favorite. Tried and true. I would consider this a "traditional" breakfast sausage......because most of these types are heavy with sage.[p]Enjoy![p]Breakfast Sausage [p]5 pound(s) Pork butt
    2 1/2 tablespoon(s) Salt
    1 tablespoon Sage
    1/2 tablespoon Nutmeg
    1 cup Water, cold
    1/2 tablespoon White pepper
    1/2 tablespoon Thyme
    1/2 teaspoon Ginger[p]PREPARATION:
    Grind pork for sausage.[p]Mix all spices together and mix into water.[p]You can add 1/2 tablespoon of ground red pepper to this if desired.[p]Add water and spice mixture to meat and hand mix until well distributed.[p]Cool immediately and use or freeze.
