What's the highest temp I can "low and slow" a butt at?

    GirlyEgg,[p]Interesting question. At some point, by definition, you move out of "barbecue temperatures" and into "roasting temperatures". In my book, that is about 275°.[p]When I'm pressed for time, I have no problem with the results when a butt is cooked at 300°, I just watch the color and foil when necessary. A lot of folks are fast cooking butts at higher temps. KickAssEd goes around 350° for 3 hours, then foils for 2, then removes and rests for 1 or 2. [p]~thirdeye~
