YB,[p]Looks great. I have an XL as well and have had trouble with the plate setter burning the gasket due to it being so close to it. I tried it yesterday between the the two rings and it seems to work but was kind of a pain to set up. Your method looks interesting but I can't tell from the pics exaclty how you have it set up. Can you dumb it down for a dummy? Thanks

That's great. I love spatchcocked chicken and there's no reason why turkey couldn't be cooked the same way. Since we were at our neighbor's for Thanksgiving Dinner yesterday, we're doing our turkey today. Mostly to use for sandwiches. [p]I'm glad you explained your process with photos. Spring Chicken,[p]Just watch the temps more carefully than I did, Leroy. I was shooting for 165 in the breast back then, not 160 - that was my mistake.[p]Happy Day-After Turkey Day!
