Mrs. E, [p]Dwelling simply means that you close all of the vents and let the meat remain on the grill for a specific period of time.[p]JCA

J Appledog,[p]If you were an indoor cook, dwell would be what you do when you brown meat on top of the stove, then stick it in the oven to finish.[p]On the BGE the equivalent is "browning" meat at a higher temp than you could get on an indoor (well most anyways), then you "bake" it or "dwell" by closing on the vents - top and bottom like JAppledog just said. When you do this, the temp inside the Egg falls to maybe 200-300 degrees in 5 minutes.

Mrs. E, be sure when you shut it all down that before you open it to BURP THE EGG!! i know from the loss of all hair close to the egg that this is a must! this means open both vents for a few seconds then barely open the lid otherwise FLASHBACK CITY!
