"Set-up" is the key word. If you're standing it up, I don't think you'll get more than a small turkey on it (12lb). [p]Let us know how it goes. There's potential with your method. The standard recipe involves icing the breast so it's a lower temperature initially and everything comes together at the end without drying out. In theory, standing it up would give the breast a little distance from the heat source. However, the ceramic material of the egg is real efficient at trapping heat, so I don't if that will play out.

I did a 28 or so pound bird beer-butt style on a Large BGE; I used a foster's "oil can" sized beer to stand the bird up.
