stuffed tenderloin

Hi Egg-ers,
I followed a recipe for stuffed tenderloin by Big Daddy, I stuffed the loin two day ago and put it in the fridge on a plate wrapped in plastic. Will cook it tomorrow, is there a problem with the stuffing going bad because it was not cooked right away??? I would think that if I cook it to 148° or beyond I should be safe. What say you??? Ü

    I allways cook them within a few hours of stuffing.
    Buy letting it sit, it's probably absorbing all of the meat juices.
    I've never cooked one to above 135. At 148 I think that's pretty well done for a tenderloin. It will likely be dry. I like them rare to med. rare That makes them nice and tender and juicy.
