I love salmon on the BGE. I also love salmon jerky and slooww smoked salmon on a plank.[p]My question to you all is how long have you successfully smoked salmon that is still edible?[p]I just did two small 1/2 pound filets that were first soaked in rum for 15 minutes, brined with brown sugar and salt for four hours and smoked for three hours on an alder plank at 225.[p]I then chilled it and today ate it on a bagel with cream cheese.[p]
MMMmmmmm good.[p]Fritz

Fritz,[p]I've probably done a filet for about an 1.5 hours - not nearly as long as your record. Salmon is wonderful on the Egg.[p]I've found that some of the best tasting salmon I 've done has come when I put the salmon on with smoking woods prior to reaching a dome of 200 and the salmon going on directly from the fridge - more smoke penetration, I guess.[p]Regards,
